  • 1 lb ground beef
  • 1 pkg bacon
  • 1/2 cup extra sharp white cheddar cheese shredded
  • 1/2 cup avocado oil mayo or bacon mayo
  • 2 tbsp sugar-free ketchup
  • 1 tbsp mustard
  • pickle juice splash
  • salt and pepper to taste

Instructions:

  • Preheat oven to 400°F. Line a baking sheet with parchment paper. Lay bacon slices in a single layer and bake for 25–30 minutes, or until crispy. Set aside.
  • While the bacon cooks, heat a skillet over medium-high heat. Add ground beef and cook, stirring only occasionally, until the meat is fully browned and begins to develop crispy bits. Season with salt and pepper to taste.
  • In a small bowl, make the Mac sauce by combining mayo, sugar-free ketchup, mustard, and a splash of pickle juice. Stir until smooth and creamy. Set aside.
  • Assemble the bowls: divide the ground beef between bowls, sprinkle with shredded cheddar cheese and crumbled bacon, then drizzle with the Mac sauce. Serve immediately.

  • To make it more strictly carnivore, skip the sauce.
  • For a ketovore variation, add shredded lettuce, diced tomatoes, or red onion.
  • For meal prep: Store the beef, bacon, and cheese in a container and keep the sauce separate. Reheat and assemble when ready to eat.
  • Save the bacon grease to cook eggs or make homemade bacon mayo.
